This Week's Menu: Utilizing Leftovers

If you are like me, you despise eating the same thing day after day...thus leftovers are a sore subject in our house.  Jake LOVES eating leftovers.  Strange.  Anyway, I at least recognize the cost savings in using up leftovers, so I have embarked on a new journey - creating *new* dishes using frozen/refrigerated leftovers.  I figure this way I am able to eat new things each day, but still use up expensive chicken/beef that we have leftover from other meals.  Here is the menu for the week at our house...

Monday - Crock Pot Baked Potatoes, fully loaded with whatever we have in the fridge (shredded cheddar, butter, sour cream, salsa) & 2 Ingredient Lemon Bars

Genius!  Cover each potato in aluminum foil and place in a crock-pot.
Easy way to have baked potatoes ready when you get home from work!

Cook on low for about eight hours.

Load them up with your favorite toppings, serve with a big salad and dinner is served!  best part is, you may not have to clean the crockpot!2 ingredient Lemon Bar. All you need it an angel food cake mix and a can of lemon pie filling. Mix them together and bake in a 9x13 cake pan at 350 degrees for 20 minutes. As they are cooling, you can sprinkle with powder sugar if you wish

Tuesday - Beef Stroganoff w/ Egg Noodles (freezing leftover beef for next week)

Wednesday - Buffalo Chicken Flautas, using leftover chicken from last week's lime chicken tacos

Might try these Flautas this week with our leftover shredded chicken

Thursday - Chili Cheese Cornbread Bake, using leftover chili that I froze from last week

Plan to use my leftover chili for this Chili Cheese Cornbread bake

Friday - frozen pizza (super cheap Totino's of course) & Morton's Steakhouse Wedge Salad

 Morton's Iceberg Wedge Salad

Saturday - shredded Chicken Caesar sandwiches (freezing leftover chicken for next week)

Slow Cooker Chicken Caesar Sandwich

Sunday - chili w/ spaghetti (freezing leftover chili to use next week for Sloppy Tater Tot Casserole)

I am *hoping* that this menu means only a very small trip to the grocery tomorrow...we'll see.

Monday - Buffalo Chicken Soup, using leftover shredded Caesar chicken
Tuesday - Puff Pastry Pot Pie, using leftover beef stroganoff
Wednesday - Crock Pot Baked Potatoes Fully Loaded
Thursday - Sloppy Tater Tot Casserole, using leftover chili
Friday - Lakehouse
Saturday - Lakehouse
Sunday - Taco Night, (save leftover taco meat for Mexican Casserole)
